Professor Nikki DeWalt joined the faculty in 2023 as Didactic Program in Dietetics (DPD) Director, bringing her passion for nutrition to the classroom within our dietetics program. Currently she teaches World Food Problems, Nutrition Assessment, Professional Seminar, Nutrition Education and Counseling, Lifecycle Nutrition, Nutrition Care Process and Topics in Nutrition: Eating Disorders. Professor DeWalt is a member of the Academy of Nutrition and Dietetics, South Suburban Dietetic Association and currently serves as the faculty sponsor for the Student Dietetic Association on campus.

Professor DeWalt earned her BS in Dietetics from Bradley University and her MS/Dietetic Internship through Eastern Illinois University. She is credentialed as a Registered Dietitian Nutritionist with a background in clinical practice. Professor DeWalt’s professional career began in 2003 as a clinical dietitian at Riverside Medical Center in Kankakee, IL. She devoted 10 years to providing inpatient medical nutrition therapy before specializing in renal nutrition in dialysis clinics. She took her clinical skills to the classroom in 2012 as an adjunct professor of nutrition and eventually transitioned into the role of Dietetic Internship Director in 2018. In this role, she continued to teach dietetics students while overseeing an accredited dietetic internship program.

Professor DeWalt grew up in Ottawa, IL and currently resides in Channahon, IL. She and her husband, Brian, have two teenage sons that keep them active. In their free time, they can be found at a baseball field or spending family time boating on the Illinois River. She also enjoys gardening and cooking.
