Dr. Anstrom joined the faculty as an adjunct professor in 1995 and accepted the directorship of the dietetic program in 1999. She teaches clinical and research related courses precepting clinical practicum hours and advising Hours and Departmental Honors research. She is the sponsor for an active and engaging student dietetic association (SDA).

Dr. Anstrom is active in the profession of Dietetics earning the distinction of the Academy of Nutrition and Dietetics Fellow (FAND). She has a passion for lifelong learning, which she instills in her students. This passion allowed her to earn the Certificate in Graduate Studies in Sustainable Agriculture and Food Systems through the Friedman School of Nutrition Science and Policy, Tufts University, Boston, MA.

She is a Registered and Licensed Dietitian in the State of Illinois. She is a certified food safety manager, instructor, and proctor for Servsafe. Dr. Anstrom encourages professionalism through example holding memberships in the Academy of Nutrition and Dietetics (AND), Illinois Academy of Nutrition and Dietetics (IAND), South Suburban and Eastern Academy of Nutrition and Dietetics (SSAND, EIAND) and Nutrition and Dietetic Educators and Preceptors (NDEP). She has served on many committees on the National, State, and district levels.
